Friday—it must be fish pizza night!

Fish Pizza – it’s what’s for dinner tonight!

Serves 4  Recipe can be halved for 2 people

2 large fillets of white fish like Basa or similar
1 can diced tomatoes with oregano and basil
¼ cup chopped onion
¼ cup diced red pepper
1 tsp. oregano
1 tsp. basil
1 tsp. tarragon
juice of 1 lemon
1 tablespoon olive oil
1 cup shredded Italian cheese

1.      Heat oven to 350°. Spray large baking dish 13 x 9” with oil. Place fish in pan.

2.   In a bowl combine tomatoes, onion and pepper with spices, lemon juice and olive oil. Mix together.

3.   Cover fish with tomato mixture. Top with shredded cheese. Bake for 30 minutes until cheese is starting to brown.

4. Serve ½ filet per person. Serve with garlic bread and steamed vegetables for a healthy meal.
